Brown Rice Nut Salad
Is one of our signature dishes, as well as, one of our most requested recipes. Loaded with lots of veggies and mixed in organic short grain brown rice, tossed in a robust tahini dressing, this salad appeals to all! Salad Ingredients:
4 Cups Short Grain Brown Rice (Cooked and Chilled)
½ Cup Carrots ½” Dice (Blanched and Cooled)
1 Cup Broccoli Florets (Blanched and Cooled)
¼ Cup Red Peppers 1/2” Dice
¼ Cup Green Peppers 1/2” Dice
1 Ea. Scallion, Thinly sliced
½ Cup Celery, Thinly Sliced
¼ Cup Red Onion, ½” Dice
¼ Cup Fresh Cilantro, Chopped
¼ Cup Raisins
⅓ Cup Walnut Pieces (Toasted)
⅓ Cup Sunflower seeds (Toasted)
⅓ Cup Sliced Almonds (Toasted)
Dressing Ingredients:
½ tsp Fresh Chopped Garlic
½ tsp Fresh Minced Ginger
2 tsp Sesame Tahini
¼ tsp Ground Cinnamon
½ tsp Ground Cumin
4 tsp Tomato Paste
¼ tsp Black Pepper
3 T Soy sauce
4 tsp Lemon Juice
½ Cup Olive Oil

Procedure:
Combine all of the Salad Ingredients in a bowl and set aside.
Dressing:
1) Combine all Ingredients in a Bowl, Except Olive Oil, and Whisk Together
2) Slowly Drizzle in Olive Oil, Whisking constantly Until Oil is incorporated
3) Toss Rice Salad and Dressing Just Prior to serving
